Cake Recipes For Christmas
Cake is always important on any occasion. There are different types of making recipes of cake. If you are making plans for a Christmas party, birthday party, anniversary celebration or a festival bash then you should try out some new recipes for cakes.

1.Boiled Fruit Cake:
1kg mixed dried fruit
200g glace cherries
4 tbsp brown sugar
1 cup milk
1 tsp bicarbonate soda
1 cup plain flour
1 cup self-rising flour
1/3 cup brandy
200g walnuts, chopped
Method of Making:
In a large pot, melt the butter on a low heat & add the mixed fruit.
Bring to the boil & add the bicarbonate soda.
Simmer on low until the fruit is plump & juicy ‘about 5 minutes’. Set aside to cool.
Preheat oven to 180°C. Take a round spring form cake tin & grease with butter. Line with 3 layers of brown paper. Expand the paper above the lip by 4cm.
In a mixing bowl, beat the eggs & put in the flour and brandy.
Pour the mixture into the cake tin & bake for two hours.
At the 40 minute mark check the top of the cake.
If it is lightly browned, cover it with a 4 layer disk of tin foil to defend the top from burning.
Check with a skewer at the one and half hour mark. If the skewer comes out clean remove from oven. If not, return to the oven for 10 minutes more & check again.
2.Luxury Christmas Cake:
One cup butter
One cup red and green candied cherries
One teaspoon baking powder
One teaspoon lemon zest
Half cup flaked coconut
Half teaspoon salt
One & half cups raisins
1-1/4 cups white sugar
Two teaspoons lemon juice
Three cups all-purpose flour
3/4 cup candied pineapple, diced
3/4 cup chopped nuts
3/4 cup dates, pitted and chopped
Method of Making:
Preheat oven to 140 to 150 C. Line a tube pan with two layers of brown paper, & grease well. Whisk jointly flour, baking powder, & salt in a big bowl. Mix up in coconut, pineapple, dates, cherries, nuts, & raisins.
Stir until all fruit is coated. In one bigger bowl, cream butter with white sugar. Add lemon juice, lemon rind & eggs; mix fit. Stir in fruit mixture. Spread batter into prepared pan. Bake for two hours.
3.Traditional Christmas Cake:
1 kg mixed dried fruit
1 cup glace apricots, chopped
3/4 cup glace cherries, chopped
1/4 cup glace ginger, chopped
1/3 cup walnuts or almonds, roughly chopped
Half cup brandy
Canola oil spray
One cup lightly packed brown sugar
1/4 cup vegetable oil
4 eggs (59g)
One teaspoon vanilla essence
1/4 cup freshly squeezed orange juice (from 1 orange)
2 cups gluten-free plain flour
Half cup gluten-free self raising-flour
One & half teaspoons mixed spice*
1/2 teaspoon cinnamon*
Blanched almonds to decorate*
1 meter length of wide Christmas ribbon or plastic Christmas decoration
Making Of Method:
In a big bowl, mix the combine dried fruit, chopped glace apricots, cherries & ginger.
Cover & stand overnight. Add the nuts & toss through.
Pre-heat the oven to 145°C. Get ready a 20cm round cake tin, sprayed calmly with the oil & lined with non-stick baking paper. Ensure the paper stands 5cm on top of the edge of the cake tin.
Put the brown sugar, oil, eggs, orange juice & vanilla spirit in a medium bowl. Beat until soft & has turned a light brown. Add to the fruit mix & mix well.
In another bowl, sift the flours, mixed spice & cinnamon and stir through to mix.
